課程介紹
餐旅趨勢與個案探討是一門專業性極高、亦是極為重要的餐旅經營課程。本課程以管理者的角度,提供餐旅產業經營管理的專業知識,使學生有機會參與討論如何以專業知識解決實務問題(尤其是餐飲業對事故的應變、意外及客訴處理)。除了深入淺出的介紹餐旅管理學所涵蓋的領域與相關的事業範圍,餐旅服務業、會展覽管理、休閒遊憩業外,也討論餐旅行銷、人力資源、領導統御,以及其他運用於餐旅業的管理知識與技能,使學生熟悉餐旅產業運作管理與團隊合作。This course is a highly professional and very important hospitality management course. From the manager's perspective, this course provides hospitality managerial knowledge and opportunities for students to participate in the discussion of how to solve problems (practically coping with operational accidents and handling customer complaints). In order to familiarize students with hospitality management and teamwork, cases used in this course cover comprehensive hospitality and related business, including hospitality services, meetings and conventions, leisure and recreation industry and discuss functional areas such as marketing, human resources, leadership, and other applied hospitality management knowledge and skills.
